Tasting Note

White peach, toasted nut and brioche notes show on the nose while the palate is creamy and rich with a fine tension and poise that is expected with this style of wine.  The power and complexity is balanced by very elegant acidity.

Viticulture

Our aim in the vineyard is to grow the best fruit we can so it can speak of its home and express its personality. To do this you need healthy vines and soil. By practicing organics and incorporating some biodynamic principles we believe we are doing our best to help achieve this and let our vineyards evolve and speak as they would like.

Winemaking

Blanc de Blancs (or ‘white of whites’ as a translation) is 100% Chardonnay. Usually it’s a tightly wound elegant style, refreshing with the Marlborough fruit really speaking. We aim for a dry full flavoured style which retains its Blanc de Blancs refinement. The Chardonnay grapes for our bubbles are picked a little earlier than our table Chardonnay, the optimum time being just when the citrus flavours are about to change to distinctive varietal Chardonnay. We hand pick and hand sort if necessary, whole bunch press and use only the free run juice, which is handled moderately oxidatively. This helps give us the texture and depth and to also flesh out the wine. The cloudy juice is transferred to barrel and fermented with a cultured yeast. We ferment in old oak and, uniquely, stainless steel barrels, allowing the wine to undergo full malolactic fermentation and extended lees aging for 11 months. The wine is lightly filtered, triaged to bottles and left on lees for 4 years. We add 4 g/l of liqueur to retain dryness.

The palate is concentrated and focused, and delivers delicate fruit intensity and fine texture, brilliantly supported by layers of engaging flavours and bright acidity, finishing impressively long and refined.
