2015 Rock Ferry The Corners Vineyard Sauvignon Blanc

Our aim in the vineyard is to grow the best fruit we can so it can speak of its home and express its personality. To do this you need healthy vines and soil. By practicing organics and incorporating some biodynamic principles we believe we are doing our best to help achieve this and let our vineyards evolve and speak as they would like.
Sauvignon Blanc clones 316 and 317 were hand harvested from our Corners Vineyard. The fruit was hand sorted and whole bunch pressed with the free run juice warm settled overnight, racked, and then fermented at 24 degrees Celsius for 12 days. The cloudy juice was racked to a seasoned oak cuve for indigenous fermentation. The wine was left on full ferment lees for 9 months prior to a last racking and bottling.
Complex aromas of stone fruit, beeswax, and loquat leads to the rich layered palate with refreshing finish. The wine has a great depth and persistence of flavour obtained from the low yielding vines and winemaking techniques employed.
Alcohol - 13.5%. pH - 3.23. TA - 6.5 g/l. RS - dry. Contains sulphites. Certified organic.
