Our aim in the vineyard is to grow the best fruit we can so it can speak of its home and express its personality. To do this you need healthy vines and soil. By practicing organics and incorporating some biodynamic principles we believe we are doing our best to help achieve this and let our vineyards evolve and speak as they would like.
The grapes were hand harvested, sorted and whole bunch pressed. The juice was settled for 24 hours and transferred into seasoned 225 L oak barrels where it went thru an indigenous fermentation. The wine was matured on full ferment lees and underwent malolactic fermentation in spring. After 11 months in oak it was lightly fined with organic milk and bottled in February 2020.
The palate fills with golden stone fruit and a touch of green tea, guided by a persistent line of acidity. A complex yet elegant mid-palate extends to a lengthy finish.
