Our aim in the vineyard is to grow the best fruit we can so it can speak of its home and express its personality. To do this you need healthy vines and soil. By practicing organics and incorporating some biodynamic principles we believe we are doing our best to help achieve this and let our vineyards evolve and speak as they would like. We spend a lot of time getting to know our land, there is much to learn, and each year we use what we learn to help make better wine, it’s a slow wonderful sometimes frustrating process
Conditions during the 2017 ripening season were perfect for early botrytis infection within our Riesling block. The weather then cleared , returning to fine days allowing the fruit to mature slowly and the botrytis to dry. We hand-picked the grapes in late May. The bunches were whole bunch pressed , the juice settled then transferred to a mixture of oak and stainless steel barrels and fermented with the indigenous yeast . The fermentation was stopped when the residual sugar reached 135 grams per litre and the wine was matured on full lees till the following January when it was racked and prepared for bottling.
Aromas of an Autumn orchard with marmalade notes on the nose. Whilst the palate has a pleasing balance of sweet and acidity with a hint of spice and a touch of yuzu.
